I see pictures online of people running coolant lines directly to the heater core. My 86 third goes to an oil cooler. Do some people bypass the cooler? It would be less clutter if I could do away with those metal lines that bolt beside head. If I did this do you just leave the oil cooler lines open?

Some people do delete it but IMO it's best not to unless it's a race car where engine temps and warmup/cooldown procedures are closely controlled.
The cooler also acts as an oil heater during warmup which gives multiple benefits as cold oil is problematic to the engine and the distributor gears so the quicker it gets up to temp the better.
