Is it possible to keep the DIS coil pack(s) with the turbo engine? If so, what changes to wiring, etc. need to be made.

Yes, it is possible. The ecu itself doesn't know whether it is sending a signal to a distributor or dis system. You just need to make sure the pin locations are correct for the ignition wires going to the turbo ecu.

Cool, is there a benefit to one over the other?
Is it necessary to retard the timing with the DIS system or will the turbo ECU control that? If it doesn't, what are my options for changing the timing?

The DIS has a bit more accurate timing control because there is no slack like in a distributor. There is no way to adjust base timing with DIS without modifying the mounting brackets. The ECU controls timing retard though so that's not really a problem.

So since I'm using the turbo block that has the distributor boss. would it hurt anything to just block that off? Also does the stock DIS location interfere with anything on the turbo block (ei. turbo or turbo/oil cooler coolant pipes)?
Also, I've noticed several people saying they don't hook up the water cooling pipe for their turbo. Is that system redundant to the oil cooling of the turbo?

The DIS system runs a "dummy shaft" that goes in the distributor hole, you should use one. The DIS coilpacks clear the turbo in stock location.
The oil in the turbo doesn't cool anything, just lubricate. The water cooling isn't "redundant" to anything else but it is only marginally effective because of the small size of the coolant jacket in the turbo relative to the massive amount of heat it generates.
It is much easier to work on without the coolant lines though and as long as you don't run it wide open and then shut it down immediately it will be fine. You are supposed to let turbo engines idle for 30 seconds or so before shutting them down anyway (a minute or more after wide open runs) to let the turbo and such cool down some.

Has anyone heard of an adjustable crank position sensor for the DIS cars? I think that would be pretty useful! Maybe even put a small electric motor attached to it by a screw so you can adjust timing on the fly using positive or negative current to the electric motor!

Anything is possible but it sounds like a recipe for disaster (the electric motor part). There is no particular need to adjust the base timing though, all of the timing advance and such is in the ecu and with a chip, you can adjust it all to whatever you want.

Reviving an old one here.
I was reading over the 91-93 Wiring swap page for the 100th time and noticed it says to salvage the coil connector from the donor harness.
Does that only apply to those who are not using DIS ignition?
And for those who are using DIS. Is it stated what pins to move and where? I don't see a section, and i know you stated before that i just need to make sure that the wire is in the correct location. Just wasn't sure if it had been covered.

It applies to those who are going to TFI with a standard turbo coil.
There is no DIS turbo swap section, the wiring should stay stock with just some pins moved at the ECU but I've never personally done it.
