I have a 92 Mustang with a 2.3T convert ion and T5 trans. I am getting the adapter plate from Canfield Industries. I plan on getting your SFI 5.0 flywheel. But what clutch should I go with. The car runs 13.90's right now. But my plans are going with bigger turbo, custom header, full ported head, big valves and big cam. I am wanting to run in the 10's next year. This will be a winter project.
I am looking at your Stage 3 and Stage 3+ I will still drive this on the street as my daily driver. It will be my rolling advertisement for my business as well.

A stage 3 v8 clutch drives super smooth on the street and can hold a ton of power so that's the one I'd suggest. You'll want to get some adjustable dowel pins and be sure to center the bellhousing on the engine perfectly during the swap to avoid shifting problems and premature wear.
