At what point does a single 3" exhaust become a restriction? I have all mandrel with a bullet muffler and was curious as to when it is hurting power?

I would say at least 450hp. I have pushed close to that and didn't see any problem. My guess, I am running a similar exhaust.

what is the difference in hp between the 3" single and the 3" to 2.5" dual system? im guessing that the duals will max out hp somwhere much earlier?

There isn't any significant hp difference between the two systems. Dual 2.5" pipes actually flow quite a bit more than a single 3" but there is more flow loss associated with the y-pipe and extra bends. Basically the dual system looks better but weigh and cost more. Single doesn't look as good, is a bit louder, but is cheaper and lighter.
