I have an AEM wideband that I'll be running to the PiMP (and to the AEM gauge). A few questions:
1) Can I just plug the hole in the stock elbow that was used for the stock oxygen sensor (with maybe a short bolt)?
2) Can I 'tee' off the wires from the AEM sensor and solder on the stock connector? So off the AEM o2 sensor there would be essentially a Y-cable with the AEM connector on one end (which would run to the gauge) and the stock o2 connector on the other (which would run through the stock wiring to the PiMP)?

No, and no.
You NEVER under any circumstances cut or modify the wideband sensor wires/connector. That plugs directly into the AEM cable you were supplied with that has a connector on both ends. One end plugs into the sensor, the other end plugs into the gauge, no cutting or modification needed here ever. The other cable that came with the gauge plugs into the gauge on one end and supplies power, grounds, and signal to the ECU on the other end (bare wires ready to be connected elsewhere). You can connect this one to the stock wiring with a the connector off the stock o2 sensor (as outlined in the startup guide in wire by wire detail), or you can keep the cable inside the car and connect it to power, grounds, and ECU without going through the stock o2 wiring.

And why wouldn't I want to block off the stock o2 sensor hole in the elbow?

You can block off the hole but not with a bolt. A bolt doesn't have anything to seal. Threads don't seal unless they are a pipe thread (which these are not).
You either leave the o2 sensor in that hole, or you can use an o2 sensor plug.
