Has anyone installed a fuel pressure sender/sensor on the schrader valve of the Ford fuel rail ('87 Turbo Coupe)? Or what is the best way to read fuel pressure with a PiMPx? Thanks.

Yes, that's the typical place to install one, if you don't have an adjustable FPR that has a port for a gauge.

Thanks. I bought an adapter that goes from Ford schrader to 1/8 inch NPT female (https://www.ebay.com/itm/303734816589?var=602972209289). I'm running the Walbro 255lph and Kirban with FID 725 injectors so I believe a 100psi sensor would work. Can you recommend a sensor? I already have the expansion connector for the PiMPx. Is pin 12 the best one to use (Spare Analog Input - 0-5v)? Thanks.

Following up to provide others with info on this installation. I used the AEM 30-2131-100 100 PSIg Brass Pressure Sensor Kit 1/8in NPT and the adapter noted above from eBay (Fuel Rail Pressure Gauge Adapter for Ford Schrader Valve Service Port). You should verify the adapter engages the schrader valve before installing the sensor (fuel should come out of the adapter). If the adapter does not fully engage the schrader valve, you can adjust the adapter. It has a hex-head threaded pin inside it and you adjust this to change the length of the pin so that it contacts the schrader. I use Permatex 59214 High Temperature Thread Sealant.
I was concerned about adding the extra mass to the fuel rail (adapter + sensor) and cracking the fuel rail so I fabricated a bracket to help minimize the amount of vibration at the sensor. Connect the sensor output to pin 12 (Spare Analog Input - 0-5v) of the PiMPx expansion connector. Ground (pin 31) and power (pin 32) can be used on the expansion connector. For settings in Tuner Studio, go to Advanced Engine>Generic Sensor Inputs to set up the sensor input. Set Sensor Source 01 to "Spare ADC (ADC13)", Field Name to a name (for example "fuel pressure"), Transformation to "Linear", 0V value to "-12.5", 5V value to "112.5", and Lag Factor to "50".
You will now see this input (whatever you named it) in your list of data sources in Tuner Studio. If you are using the Perfect Tuning gauge, select "Sensor 1" to display fuel pressure.

FYI, we're adding the fuel rail adapter fittings (both straight and 90 degree) to our site soon, along with an analog liquid filled pressure gauge.
