How streetable is this car? Compared to daily driving duties?

It's completely streetable. Drives as good or better than a stocker out of boost. It certainly makes more power out of boost than a stock 2.3T does.

I hope you don't mind but I'm going to try and mirror my car to what you've done here. It's a daily driver though, not just a weekend warrior, I drive 20 miles to work one way... so hopefully it's as tame as it sounds. Even with that stage 3 cam it doesn't loose power at idle? Thanks again for all this info!

The airflow mods offset the loss of power by the cam at "idle". If you are concerned with mileage, a stage 2 or 1.9 cam may be better for you.

Mileage isn't a concern. I was mainly concerned about the car in traffic. Sometimes it gets bad and I have to sit for a little while.
What do you mean by airflow mods? Also in the pics the filter goes straight into the turbo, no VAM or MAF meter to be seen. Am I just missing it or what do you use for measuring air?

Airflow mods are items that increase airflow through the engine (header, 3" exhaust, larger turbo, fully ported intake, K&N filter, ported Aluminum head, etc.).
I'm running a megasquirt ecu which doesn't use an air meter, it is a speed density system.

The megasquirt ecu's are the one's they call a "project" or something like that right? They are the one's that are like a blank circuit board that you have to build yourself...

From the Megasquirt site? Made specifically for our cars? I didn't see that on their site.
How do you like using the speed density compared to a MAF set up?
If I were to go with a MAF set up, can it be tuned with more modern tech like SCT Xcals or Sniper software? Or would that require a different kind of ECM?

None of the tuning options are any better than your own abilities to understand the software and the engine's requirements.
No, on the SCT or Sniper, though there is other "modern tech" tuning software/hardware available that is just as or more powerful than those options. This is more of a ECU Tuning Tech subject though.

I'm still dealing with some alternator issues but I did take it out for some test runs tonight. With the old setup (ported iron head with worn valve seats and ranger roller cam and LA3 ecu, everything else the same) it would run 102-103mph at 22-24psi. I did some gtech runs tonight at 8psi with the new setup and ran a best of 101.8mph...I'd say it's got the potential to really haul ass

In ported form they are both about the same. The inline lower is better for making custom plenum intakes out of though. I've got a powdercoated square intake that is going on after it is ported.
